They each respond to the movements of your car, and shout relevant phrases. Which one you choose completely depends on your driving style and manner:
Homer – Homer shouts insults at you or the other drivers, in classic Homer fashion. Some of his wonderful words are:

Darth Vader – If you want someone to preach the dark side to you whilst driving, Darth Vader is the clear choice. You’ll feel like you’re driving an X-Wing Starfighter rather than a Ford Mondeo! Some of his classic Star Wars phrases are:
“Do not underestimate the power of the dark side!”
“I find your lack of faith disturbing.”
Yoda – Listen to Jedi words of wisdom whilst driving home after work. Yoda is sure to calm you in the rush hour crush with his peaceful words:
“May the force be with you.”
“Sense the force around you”
“Hard to see the dark side it is.”
